
I love to have soup for dinner in the fall months. I don’t know why, there’s just something triggered in my brain by colorful leaves that makes me crave warm, yummy soup. Does this happen to anyone else this time of year?
Broccoli soup has been one of my favorites for a long time, but I have to admit it annoys me to make a rue and dirty another pan. On Friday I had some friends and there kids over to decorate Halloween cookies, and have a little lunch. It’s fall, so of course I served soup. I decided to do a chicken chili, because I had everything for it, but I was worried the kids might not like it so much. At the last minute I realized I had everything for broccoli soup so I threw some together. I really didn’t want to dirty another pan (that would make my kitchen look dirty-er when everyone got there) so I thought hmmm, why don’t I just use some instant potatoes to thicken it instead of making a rue. The results were pretty amazing.
If you want to gauge the soups deliciousness by peoples reactions, lets just say the chicken chili was feeling pretty bad about itself by the end of lunch. The broccoli soup pan was basically licked clean and the poor chicken chili pan was still pretty much full. My friends were loving the broccoli soup and everyone was asking what was in it and wanting the recipe. Posting it today will kill two birds with one stone. My friends can just get the recipe off of this site and you all can have a delicious soup recipe to make for dinner.
Broccoli Soup
1 1/2 – 2 lbs broccoli, Fresh or frozen, chopped finely 1 small to medium onion, finely diced 3 regular size carrots, extra finely diced 6-8 cups water 4-6 tsp or chicken bullion 1/4 tsp pepper dash of salt 1 cup cream or evaporated milk 1-1 1/2 cups instant potatoes 1-2 cups shredded cheese Put chopped, onion, carrot and broccoli in a large pot. Add water until water is about 1/2 inch above veggies. Add about 1/2 tsp bullion per cup of water you used to cover the veggies. Add dash of regular salt and 1/4 tsp ground black pepper. Boil until veggies are tender. Once veggies are tender add cream or evaporated milk, and instant potatoes. Stir until flakes are all dissolved. Add more potatoes until soup is desired thickness. Remove from heat and add cheese. When the cheese is melted soup is ready to serve. So easy.My only two suggestions for you if you make this soup are; If you have a food chopper use it on all the veggies (huge time saver) and if you use frozen broccoli let it sit out for a while or defrost it a little in your microwave to make it easier to chop. Oh wait, I do have one more suggestion. Make the rolls I posted a couple weeks ago to go with it.

It all looks yummy. I know what you mean about making soup this time of year. It is something I want to do most of the year but Fall and Winter is my favorite time to make soup and bread.

I always use instant potatoes too! It makes the whole thing quicker and less messy for sure!! People always think the soup is from a mix (from Sister Costco) because it is so light colored and yummy.
Once I told a pal about it, and she said she only liked to cook from scratch and could not imagine that it would taste good~ I just looked at my good friend and felt sorry for her & all the extra work that she did.

Hmmm…I might just have to try this broccoli soup! I just wrote a post about a kids board book that we have that makes broccoli soup sound icky. Your post on the other hand? Sounds yummy!!
I just made your broccoli soup last night, and it was a hit! My 2 year old LOVED it (cleaned her bowl!), and even my husband whom I’ve NEVER been able to get to eat broccoli or carrots had a big bowl and liked it! Thanks for such a great recipe, that is also nutritious!
