Chewy Rocky Road Bars

I some how managed to get strep throat this week (boo hoo).  Having a sore throat really interferes with eating, which you must know is very upsetting to me. I was totally thrown off of my groove and didn’t cook much at all.

Because I wasn’t exactly productive in the kitchen (or anywhere else for that matter) this week, I thought I would share a yummy treat recipe I found a few months ago over at Chocolate on my Cranium.  I made these bars a few months back and thought they were pretty amazing. I made them again a few days ago when I was starting to feel better and I tried a little variation that I think turned out awesome. So…you can follow the recipe, or…. you can change it up a little like I did. Either way you are really going to like this new take on a layered bar. They are Super good!

* Maria’s variation: For crust- use 1 cup crushed pretzels and 1/2 cup crushed graham crackers. Also, add 1/2 cup of peanut butter to condensed milk and mix thoroughly before drizzling over crust. I really liked the added taste of the peanut butter. Peanut butter baking chips would be another great way to get some peanut butter taste into the bar.

Your variation sounds good to me with the added grams and peanut butter, so do you keep the butterscotch chips in or leave those out? Sorry you have strep throat that hurts hopefully the kids didn’t get it.

I left them out when I used the peanut butter because I didn’t have any. I think they would still taste really good with the butterscotch chips though. The peanut butter rice crispy treats I love have butterscotch and chocolate chips in the frosting and they are delicious!

I have my fingers crossed that no one else in the family will get it.

Strep throat?! That is crazy, I was just talking to a woman who is pregnant and has had it three times in her pregnancy. She said it is going around everywhere.

So sorry! That is the worst. If I lived there I would bring you a big batch of soup, and ice cream…or Popsicles if you prefer….

Yea, fun times around here. That poor women! I think I would rather slit my wrist and do push ups in salt water then have strep throat three times while pregnant.

Your picture looks SO yummy. I checked out the recipe and I’m not a fan of coconut, so I might try it without that. Thanks for sharing!

Ah I knew you’d nto let me down Maria… first opportunity to check out our site before the moving truck arrives tomorrow and guess what.. all the boys have horrendous colds and I have a sore throat – lord help me if it’s step throat though!!! Right now I’m back to bed to rest before the whole world goes crazy with boxes and bubble wrap.
Oh and Destri I’m knocking back the Umcka – got yours yet? I’m thinking this moving stuff and new cities makes you sick…….best stock up now before that back of beyond place hits! Sorry back of beyond place lovers….! Actually, I’m not sorry, I’m just not a small town kinda gal.
