Citrus Candied Nuts

Hello there, hope the Summer has been wonderful for all of you, mine has been fabulous but I’m not quite ready to give it up yet. It seems like Summer passes much to quickly and before we know it Thanksgiving and Christmas are upon us. Oh I don’t want to even go there yet.

Anyway, I don’t think I ever had citrus candied nuts until I made these the other day. Guess what…these little nuts didn’t last long at all because I ate almost all of them! I couldn’t help it – the fresh citrus taste with a hint of spice and a candy coating, what’s not to love, right?  I was thinking that these nuts would go perfect on salad or muffins or even on a cake if they could have lasted that long. Luckily they were pretty simple to make so I will have to make some more soon. These nuts would also make a perfect gift for someone.  What are you waiting for, grab some nuts and get started but I’m warning you they are tough to keep around the house with out inhaling the whole batch!

Citrus Candied Nuts

Recipe adapted from about.com orange glazed walnuts.

Ingredients:
1 1/2 cup sugar
4 T. orange juice
1 T. corn syrup
1/4 tsp. ground cinnamon
1/4 tsp. ground all spice
zest of 2 good size lemons
2 drops tangerine oil (optional)
3 cups whole unsalted walnuts toast light if desired

Directions:
Step 1: In medium size heavy saucepan put sugar, orange juice and corn syrup in. Turn heat on to medium high and stir well. Put a candy thermometer in and let the mixture come to 240-45 degrees Fahrenheit.
Step 2: When the sugar mixture reaches the right temperature take off heat and stir in the the remainder ingredients. Make sure all the ingredients are stirred well then pour onto a foil lined cookie sheet light sprayed with cooking spray. Let cool completely and break into pieces. Store in tightly sealed container.

This is the one thing I swear you will not be able to get _anywhere_ in Austria this time of year: walnuts. So I’ll have to wait to try this recipe — sounds delicious!

Thanks Corinna, you could try them with your favorite nut, walnuts are just what I tried so don’t wait to try them out!
