Cold Summer Oatmeal Revisited

Summer Oatmeal Recipe

Hot oatmeal is so last winter.  It’s the first day of summer, so let’s give our morning oatmeal a summertime makeover, shall we?  I have made my oatmeal like this for a few years now – ever since Aubrey turned me onto it.  It is the perfect cool, crunchy, chewy, yummy summer breakfast.  And now that I have discovered vanilla coconut milk, oh my.  So so good.  Plus the coconut milk only has 5 grams of sugar per cup verses the 9 grams 1 cup of 2% milk has, less sugar!

You can make this a bunch of different ways, the idea is to let your oatmeal soak for about 15 minutes in the milk of your choice (cow’s, almond, soy, coconut) and then add your favorites toppings.  Here is how I made mine last year, bu this is my favorite new way to make it :)

Summertime Oatmeal

Ingredients:

1/2 cup old fashioned oats

3/4 vanilla coconut milk

sliced strawberries

blueberries

2 Tbs granola

dash of cinnamon

Let the oatmeal soak in the milk for a little bit, and then add the rest of the ingredients.  Enjoy!

You can use frozen fruit too, I just add it when I add the milk.  Then you have a nice cold bite for those extra hot summer days!

Oh, and my 2 year old loves it too!  She started asking for bites of mine, and now she would rather have it cold.

Okay, Amy that is just crazy! For some reason I thought of you when I was writing this up! I think I was thinking that you could share the scoop on coconut milk :) Is it good for us? Please tell me it is, because I really really like it. It is great in smoothies too. Or maybe it was your new adventure with vegan…seriously, crazy!

Kim I was looking at your kids in the sprinklers this morning and thought the same thing.
You remind me that I need to take more pics of my kids.
As for my pictures, I just take a million, and figure one is bound to turn out! I have been trying to work on composition, and telling a story with the pictures, but my, that takes time.
It is fun to work on though, and a much cheaper hobby than sewing!
I love love looking at your images, so I will take you compliment and run with it, thank you :)

Ridiculous!! Absolutely ridiculous! This is soooo good. I just tried oatmeal this way a couple of nights ago when I didn’t feel like cooking oatmeal, and it was unbelievable… and I thought cooked oatmeal was incredible already!! I have tried it with a mix of yogurt, almond milk, and banana, using quick oats… and then last night I used Old fashioned rolled oats, in almond milk with a few drops of English toffee stevia – sooooooo unbelievable!! I was also munching an apple at the same time and I would take a little bite of apple and a spoonful of the oaty goodness at the same time and heaven settled in my mouth!! (Note that this is in VERY cold weather… I mean, really, I couldn’t wait for summer to eat this!!) PS. That’s a gorgeous picture!!

ABsolutely!! Haha… ok, let’s just make a deal – You keep posting awesome recipes and I’ll keep leaving awesome comments!! Yay for me discovering uncooked oats (I guess the Swiss were really on to something with their Muesli!!) and yay for you discovering E.T. Stevia… what brand did you get? I have Sweet Leaf. I also have a Raspberry Chocolate on… it was pretty good too, though slightly fake (however, still yummy) tasting. I don’t know if it’s because it is a little past the expiry date or what, but it tastes a little bitter now. I really want to try the Hazelnut one, and really wish they had a maple walnut one (but they don’t as far as I know).
