Crockpot BBQ Chicken Sandwiches

No grill?  No problem – just grab that crock pot, toss in some chicken (frozen or thawed), add your favorite BBQ sauce and turn on low.  In a few hours you’re smelling that yummy chicken and thanking your lucky stars you’ve got a plan because everyone is starving and you need to get dinner on the table asap.
Wait you forgot to buy buns.  No biggie, grab a ready to bake can of Grandy’s biscuits pop them in the oven for 15 minutes. While those are baking prep your lettuce, tomato, and secret sauce. Warm the pre-cooked bacon and you’re almost done.  A side of fruit salad or potato salad completes this simple meal and makes everyone happy including the kids who love chicken and BBQ sauce.

Simple Barbeque Chicken Sandwiches

Ingredients:
4 boneless skinless chicken breast cut in half about 5 oz. each. fresh or frozen
about a cup of BBQ sauce plus extra for special sauce
1 can Grandy’s biscuits baked
fresh lettuce
1 tomato sliced
4 slices of cheese (I used colby/jack)
4 pieces of pre-cooked bacon (for convenience only, can use regular bacon)
equal parts BBQ sauce and mayonnaise to make special sauce for spreading on bread.

Directions:
Step 1: Place chicken in the crock-pot and BBQ sauce and stir the sauce around to coat boy sides of chicken. Put lid on and turn power to low. If using thawed meat it should only take about 2 1/2 hours and around 5 hours for frozen.
Step 2: Bake the biscuits according to package directions
Step 3: Prepare the sandwich toppings by washing lettuce, tomato and slicing. Warm bacon or cook bacon if not used pre-cooked. slice cheese. Make the special sauce by combining equal parts BBQ and mayonnaise. Depending on how much sauce you like start small like about 4 T. of each.
Step 4: After biscuits are baked and cooked enough to handle split one biscuit per each piece of chicken. Spread some special sauce on each side of the biscuit and top one side with chicken and the rest of the toppings. Put top biscuit on and enjoy!

Note: You could shred the chicken and make the sandwiches that way too, I used whole chicken pieces.
