
So. I love chocolate. Not just any chocolate, but the dark slightly bitter stuff. Okay, scratch that, I like it all…but really dark is my favorite, but not so dark that it won’t melt in your mouth :). Has that happened to you? I bought an 89% cacao bar once and it was like eating a can of powder. Not so good. Anyhoo, I am always on the lookout for good chocolate. It is my one indulgence for the day, and a while back I decided to mix it up a bit with some coconut, toasted almonds and instant coffee for a kick. Mmmmm. It is my new chocolate obsession.
Dark Chocolate with Coconut, Toasted Almonds, and Coffee
Ingredients:
11 ounces dark chocolate
2 Tbls heavy cream
1 Tbls instant coffee – if you are not a coffee fan, just leave it out :)
1/2 to 1 cup shredded coconut – it all depends on how much you like coconut!
1/2 cup toasted slivered almonds
Directions:
First you will toast the almonds in a skillet over medium heat, tossing frequently until they are golden brown. Set aside.
If you really know what you are doing, you would probably make a double boiler with a pan and bowl to melt this all in, but I am currently without a glass bowl, so I just did it in a pot. I melted my chocolate over low heat, added the cream and coffee, and then the coconut and almonds. You don’t want to take too long for this process, or you will over-cook the chocolate, so try to be quick about it once the chocolate is melted.

Then scoop it with a teaspoon onto wax paper and let cool.

Then take a bite and get ready to start swatting little hands that are aiming to deplete your emergency supply :).
I stored mine in an airtight container where the kids couldn’t reach, and thank goodness my hubby isn’t a fan of chocolates…

It’s only been about 2 or three years since I’ve found an appreciation for dark chocolate. Actually Suzanne was the one that turned me onto it.
On a road trip a couple years ago she taught me how to properly eat a dark chocolate Dove chocolate Candy. You put it on the roof of your mouth and just suck on it until it completely dissolves into nothingness. I have to admit there is something about good dark chocolate that just makes everything feel right in the world.
These look absolutely delicious…I am a BIG chocolate fan and will definitely try these.
