
Back in May my brother got married and instead of a wedding luncheon they had a wedding breakfast. I helped my mom with the food. I was in charge of the egg casseroles. The whole breakfast was awesome, but I have to admit the eggs were probably my favorite part.
This is a recipe everyone needs for those days when you are to tired to make dinner but you still want something somewhat good for you. This recipe will also save the day for you when you have company for breakfast or when you need to take something to a potluck brunch. It is simple and when you are in a pinch it can be adapted to whatever ingredients you have in your fridge.
I think I have mentioned it before, but I feel like I can’t breathe if I don’t have eggs in my fridge. Even when I am down to a dozen I start to feel nervous. For those of you who are not ‘egg horders’ you may need to go out and buy more eggs to make this recipe because it does take a whole dozen eggs. If you’re like me it won’t be an issue. Anywho, here is the recipe…..
Easy Egg Breakfast Casserole
1 dozen eggs 1/2 cup milk or cream 1/4 tsp salt pinch of pepper 1 cup ham, small cubes 1-1/2 cups shredded cheddar or monterey jack cheese 2-3 cups veggies, cut in small or thin pieces and sauteed (I like to use zucchini, spinach, onion, mushrooms, broccoli, and peppers.)Preheat oven to 350°. Crack eggs into large bowl and beat with a wire whisk until all yolks are broken and well blended. Add milk, salt and pepper.

Add meat, sauteed veggies, and cheese. Stir until combined.

Pour mixture into a greased 9×13 pan. Place in preheated oven and bake for 30-45 minutes or until center is set. (Glass pans will cook faster then metal or stone pans, so watch it closely the last five or ten minutes.)

I mentioned before that this recipe can be adapted to what you have in your fridge, here are a couple examples. The possibilities are endless so be creative. Just make sure if you use sausage or bacon you precook it before adding it to the eggs. And if you don’t want to saute the veggies first, cut them extra tiny and only add two tablespoons of milk instead of a half a cup. The reason I saute them first is to get the water out of them. If you don’t saute them your eggs might be a little wet and may not stay together well.
- Sausage, onions, red and green peppers, 1/2 cup cottage cheese, 1 cup monterey jack cheese -Ham, cheddar cheese and green onions -Bacon, mushrooms, spinach, onions, and swiss cheese. -Sausage, zucchini, spinach, garlic and mozzarella cheese. -Ham, broccoli and cheddar cheese. -Bacon, asparagus, onions, mushrooms, peppers and cheddar or monterey jack cheese.So those are my different ideas……what do you think would be delicious?

I have been looking for an Easy and Simple Breakfast Casserole recipe for Christmas Morning for years….Have not found one yet that looks this easy!
i make something very similar except i bake it in a muffin tin this way its already individual servings.
I have a recipe kind of like this one but this seems to been a lot easier. I will give it a try because it sounds so good!
I love this version of the recipe! My MIL makes a yummy breakfast casserole but hers is not filled with veggies. I am trying to eat healthier so I may use 2 whole eggs and use only the whites from the other 10 eggs. Sure will be packing a lot of protein!

I googled “ham broccoli cheddar egg bake.” Most of what came up were too complicated — I wanted easy — or had bread in them — I don’t eat wheat — or not enough veggies — I try to eat a plant-based with some protein diet. Your recipe seemed perfect. And it was.
I made 2 pans of the ham, etc. bake and 1 pan that was spinach, onion, mushroom and feta for a gathering today. Everyone loved both and want the recipes.
We, my husband and I, prepped the fillings yesterday — I made sure to saute the spinach long enough to get out most of the water per your warning and the broccoli to make it tender — then added the egg/milk mix today and poured everything into pre-sprayed pans.
We put them in a cold oven. Then turned the oven on 45 minutes ahead of when we took them out. They were perfect. Thanks for the warning to watch the glass pans closely: we took those out first and left the extra pan, which was in aluminum, in the the oven til we needed it.
