Giant Eclair Dessert

Or should I say “Zebra Dessert,” like my 4 year old. Whatever you want to call it, this is one of my favorite desserts. It is easy! It has basic ingredients that I usually have on hand, and it is perfect for potlucks or those times when you need to bring a dessert. It makes a big cookie sheet full so everyone can have a second piece…..and believe me you are going to want that second piece.

My mom calls this dessert ‘craters on the moon,’ because the crust comes out looking like the surface of the moon. I should warn you, the uneven crust surface does make it a little tricky to cover with the pudding mixture and the whip cream. Luckily if you mess up a little on those layers the chocolate syrup design on top hides the imperfections.

Giant Eclair Dessert

Crust:

1 cup flour (don’t try and use wheat here)
1/2 cup butter or margarine
1 cup water
6 eggs
Preheat oven to 400°.  Bring water and butter to a boil, remove from heat and whisk in flour. Transfer to a plastic or glass bowl and using a hand mixer or a very strong arm, mix in eggs one at a time. Batter will be very glossy by the sixth egg. Spread evenly on a large greased cookie sheet. Bake at 400° for 15-20 minutes until light golden brown. Let cool completely before topping.

Filling:

1 large box instant vanilla pudding mix
1 8 oz cream cheese
3 cups milk
1 8 oz cool whip—or 12 oz if you want a thicker layer and an easier time
spreading it. :)
Chocolate Syrup
Soften cream cheese by leaving it out at room temperature for a few hours or microwave it for 30-45 seconds. Add the milk to the pudding mix and mix thoroughly. Let stand a few minutes until it thickens and then beat in the cream cheese. It is really hard to get the cream cheese all the way blended into the pudding. Don’t worry if there are tiny little dots of the cream cheese that have not been blended. If they are small you won’t notice them when you are eating the dessert. Spread pudding mixture on the completely cooled crust and then immediately top with cool whip. Using the chocolate syrup bottle, drizzle syrup over cool whip in a back and forth pattern from one end to the other. Take a Knife and drag it one direction and then the other every two inches until you have completed a nice zebra looking pattern on the entire eclair. Keep refrigerated.

Yummy! Now just remember to call me when you make this so I can come have a piece….or two.

I love this one for the same reasons you already mentioned. It’s always a go-to for me when I need to take a dessert for a lot of people. I will never forget the first time I had it…you brought it to the Macey’s work party at the park in Providence. Do you remember that? Anyway, it was love at first taste & practically changed my life. :)

p.s. I think I’m going to be making your corn chowder in the next couple of days. I can’t wait to try it.

I actually can’t remember taking the dessert to that picnic, but I am really glad it had such an impact on you. :)

this is one of my favorite desserts to make to take places! i love that you call it the zebra dessert. :) i think it might have a new name now for us!

hum so this, like many of yor recipes, caught my attention… got any ideas for a change for pudding mix (not a fan) and I’m guessing I could use heavy whipping cream instead of cool whip.. whaddya think ?

You could make a vanilla pudding from scratch, and real whipping cream would be very yummy. The only problem might be if you don’t eat it all in one day….the cream might go a littel watery and make the rest of the desert soggy.

I think this is the same cake my mom calls a “cream puff cake.” She makes hers in a 9×13″ pan, but otherwise it seems really similar. It’s delicious!

I never had it either… and it’s not fair that you make all this yummy stuff, and you are still skinny! I just looked at the picture, and probably gained 5 more pounds just now! =(

Think I’ll make this at Thanksgiving time during the Pritchard Family reunion. =)

OK, It’s 8:00 in the morning and I am ready to call off work and sit home and eat this dessert all by my self.
This looks incredible. I can’t wait to make it. Having company this weekend and this will be perfect.

If you want to make the filling blend better, use an electric mixer and a different mixing order. Start with the cream cheese. When it is looking fluffy, GRADUALLY add the milk. After the milk is fully incorporated, add the pudding mix. This will ensure that all of the cream cheese is blended in without those lumps mentioned above.

This recipe is awesome! Try adding some sliced almonds! My family loved it….I making it for my sisters Bray….and Easter!:) I’m also thinking about making a pistachio one!!!!!!!;)
