Grilled Chicken With Raspberry Balsamic Sauce

I’ve got a yummy Summer BBQ chicken for you today.  I just love to grill in the Summer months and boneless skinless chicken is one my favorites because it cooks fast and it’s healthy.  Of course you could grill chicken with the skin on and with the bone, I just prefer my grill time to be quick and easy. I love grilled balsamic chicken and vegetables, and when I saw a raspberry flavored balsamic vinegar I bought it and thought it would be perfect for marinade and for sauce.  My inspiration for the sauce comes from my friend Paula over at Salad in a Jar when she introduced to me to this delicious strawberry balsamic sauce.  I hope you enjoy this twist on an old favorite grilled chicken.

Grilled Chicken With Raspberry Balsamic Sauce

Ingredients:
4- 5 oz. boneless skinless chicken breast portions, or cut a whole breast in half for smaller portions and quicker grilling time.
1/2 cup Raspberry flavored balsamic vinegar or regular flavor balsamic vinegar divided
1-2 garlic cloves pressed
1/4 cup vegetable oil such as canola or sunflower
1 tsp. salt
1/2 tsp. pepper
2 cup of frozen raspberries
1/4 cup granulated sugar

Directions:
Step 1: First prick chicken several places on both sides. Put garlic, salt, pepper. oil and 1/4 cup of raspberry balsamic vinegar in a gallon size zip-loc bag and close and shake bag, then add chicken and close bag and massage the marinade into the chicken. Marinate for 4-5 hours, keep refrigerated until ready to grill. You can marinate less time about an hour will do fine.
Step 2: After the chicken has marinated long enough start heating your grill to get it hot. Then begin to make the raspberry sauce. In a 4 cup or larger microwave safe bowl put the frozen raspberries in the bowl then add the sugar and balsamic vinegar. Stir and microwave on high for about 6 minutes.
Step 3: Stir the raspberry sauce and if you do not like the seeds strain the sauce now through a wire sieve. I wish I would have strained at least half of my sauce, I really don’t mind seeds but it seemed to have too much without straining. Let sauce cool until it thickens.
Step 4: Grill should be ready and hot, grill chicken on hot to medium hot grill. If grill is hot enough then each side of the chicken should take 3-4 minutes on each side that is for a 5 oz. boneless skinless piece of chicken. If your chicken is bigger it will take longer per side. Just make sure when you think the chicken is done that the juices run clear. Grilling takes practice so if your new to it then it may take a few times getting used to your grill and where the hot spots are and the cold spots so be patient with yourself. When chicken is done serve with the sauce.


Notes:
If you like heat to your sauce add some hot sauce (Sriracha is good) to your raspberry sauce or cayenne pepper.
