
Every once in a while I accidentally do something pretty great, and I feel like this is one of those times.
A few years ago my sister gave me a recipe for chicken that I really liked. I have been craving it lately, but I couldn’t find the recipe anywhere. I thought the original recipe had a honey and curry based sauce. I looked online and tried to find the recipe I remembered. I didn’t have any luck. My sister’s recipe had you lightly coat the chicken in a flour mixture and partially bake it before you added the sauce. Most of the recipes I found were for sauteed chicken coated in sauce.
I tried calling my sister and couldn’t get a hold of her. I was desperate. I decided to just try and remember what I could and wing it. I was watching a friends kids that night. My friend is in her first trimester of pregnancy…so she doesn’t really feel like cooking to much. When they came to pick up the kids I asked them if they wanted to eat with us. I was a little worried about how dinner was going to turn out but I figure it would probably be better then cold cereal. They were willing to be brave and decided to stay.
Well folks, it turned out DELICIOUS!!. Even better then I remember it tasting. You would think I normally cook disgusting dinners the way my husband was raving about how good this was (like he couldn’t believe it.) My friends husband was like…” honey, did you get this recipe?” And my friend suggested I put it on The Mother Huddle ASAP. To bad I didn’t really write exact measurements down as I was going along. Opps. Don’t worry, I made it again on Saturday and kept track of what I was doing. It may not be a very photogenic recipe, but it makes up for it in flavor.
The funniest thing about this little story….when I called my sister she said the real recipe is for Ginger Chicken. Not sure why I was thinking curry. Oh well, curry rocked it.
Honey Curry Chicken
1-1/2 lbs chicken breast, 1 inch cubes uncooked 1/2 cup all purpose flour 1/4 tsp garlic powder 1/8 tsp black pepper 1/4 tsp salt GLAZE: 2-1/2 TBSP honey 2 tsp lemon juice 1/4 cup melted butter 1 tsp curry powder 2 green onions, thinly sliced 1/4 tsp garlic powder 2-1/2 tsp soy sauce pinch of salt pinch of pepperPreheat oven to 350°. Lightly grease a glass 9×13 pan. In a gallon sized zip lock bag or large container with an air tight lid, combine flour, 1/4 tsp garlic powder, salt and pepper. Mix well and then add raw chicken chunks and shake until chicken is evenly coated with flour mixture.

Place coated chicken evenly in the greased 9×13 pan. Bake for 40 minutes flipping (stirring) the chicken once half way through.
While chicken is cooking make the glaze. Combine all glaze ingredients in a medium sized bowl and whisk together until well combined. After chicken has cooked for 40 minutes, increase oven temperature to 400° and evenly pour glaze over the chicken. Cook for 10 minutes. Serve over white rice. Our family likes to eat it with chow-mien noodle sprinkled on top.

I don’t know how but I stumbled upon your blog and am so happy that I did. My husband and I made this dish last night and it is a new family favorite. We like things a tad on the spicy side so I added some Chili paste to it to kick it up just a bit. So GOOD! Thanks for this great recipe!!!

Melissa- hw much Chili paste did you add? I made this and doubled the glaze. Awesome. I am now (literally now) substituting orange (fresh) juice and zest to make an orange (without the curry) version. Chili paste would be incredible versus the chili pepper flakes I’m using.

My husband and I just finished eating this for lunch today, and may I say it was delicious!!! The only thing I did differently, was I added canned pineapple chunks (which I cut in half) and canned green beans when I added the glaze. Fantastic! This will be going in my recipe book for sure! That chicken looks so good to me but I must ask what level of sweetness can be expected. I would love the sweet taste of honey with the chicken but my husband would frown. I might be able to slip it past him if the honey isn’t too sweet. lol Also, the veggies in the first pic look awesome. Post recipe, too, please. Thanks!
Hey Denice, I know this is a really late response, but I thought you still might be interested to know. The sweeetness is very subtle. I am one of those people who hate sweet and sour dishes because the sweetness just ruins it for me. I think he would love it.
I just made this and it is absolutely DELICIOUS! I will definitely revisit this recipe.
I substituted 1/2 of an onion julienned and sauteed it in the butter, then added the remaining ingredients. I also doubled the curry powder, added some cumin, cayenne pepper, fresh ginger and lime leaves. It was good, thanks for the inspiration!
