My mom made these Jumbo Banana Cookies all the time growing up. They are the perfect way to use up over ripe bananas. My kids love to help smash the bananas and frost the cookies while they are still warm. My silly four year old likes to lick up the melted frosting as it falls through the cooling rack. I love recipes that have simple ingredients that I almost always have in my house. If you have over ripe banana’s there is a good chance you’ve got everything you need to throw these cookies together before the kids get home from school.
Jumbo Banana Cookies
Yields: 3 1/2 dozen
1 cup shortening (I do half shortening half butter)
1 cup sugar
1 cup ripe mashed banana
1/2 cup buttermilk (I use regular milk with 1/2 tsp lemon juice or vinegar in it)
1 tsp vanilla
3 cups flour ( I use one cup wheat flour and two cups white)
1 1/2 tsp baking soda
1/2 tsp salt
Cream together shortening (butter), eggs, and sugar. Stir in bananas, milk and vanilla. Add flour, soda and salt. Drop by tablespoon full onto a greased cookie sheet. Bake at 350° for 10 minutes. Frost while warm.
3 cups powdered sugar
2-3 tbsp evaporated milk
1/4 cup butter
1 tsp vanilla
dash of salt
Mix all ingredients until smooth. Frost warm cookies….this is a little messy put wax paper under cooling rack if you don’t have a four year old to lick up all the drips. :)
