
Valentine’s Day is here and you may not have had time to think much about it. Here are 2 ideas that you can put together in a flash and make your loved ones feel special. Everyone loves cupcakes and they are easy to make and decorate. Sure you could buy the ready made cupcakes at the grocery store but mixing a cake mix up and frosting them with white cream cheese frosting (store bought or homemade) decorated with sprinkles and conversation hearts is just tastier.
If you’re thinking “what am I going to do with all those cupcakes?” give them to neighbors, your mailman or woman, or anyone that may need some cheer on this special day. To make these cupcakes I used a strawberry cake mix and I made some cream cheese frosting and piped it on with a large star tip. There is no need to use a decorator bag and tip – just frost with knife, use sprinkles, hearts and your done.
If you aren’t a baker but you want something a little extra special then chocolate dipped fruit is sure to please (and make you look like super mom with little effort). Fresh strawberries are usually on sale this time of the year along with other seasonal fruit. If you like white chocolate then use both white and dark chocolate to dip the fruit in.

You could really make this fun and serve it fondue style. Just have a plate full of fresh fruit, cookies, marshmallows and have everyone dip until there hearts content.
Simply buy your favorite chocolate, melt in the microwave stirring every 30 seconds or melt over a double boiler. Serve at the table, or dip your clean fruit in the chocolate then dry on wax paper, it’s so easy.
