Happy Tuesday friends! I hope everyone had a great holiday weekend. We did absolutely nothing but enjoy the finally dropped below 90° weather, and it was wonderful. I did have a chance to take a picture of this pork chop and black beans recipe I have been wanting to share with you. So good! It’s packed with tons of flavor, cooks up in one skillet, in under thirty minutes. In my house that qualifies this recipe to my monthly rotation. Even my husband who is not much of a pork chops fan loves this dish. Coming in at less than $2.50 per serving, it’s budget friendly too. Catch me after the jump for the recipe!
Pork Loin Chops With A Black Bean Salsa
Adapted from Better Homes and Gardens 11th edition cook book
Ingredients:4 pork loin chops, cut ¾ inch thick, fat trimmed Salt and pepper 1 tablespoon olive oil 1 15-ounce can black beans, drained and rinsed 1 14½-ounce can corn, drained 2 cups salsa 1/2 cup chopped cilantro Sour cream
- Rub a little salt and pepper onto the pork chops. In a large skillet heat olive oil over medium-high heat. Add pork chops and allow to brown on each side, turning once (about five minutes). Take the pork chops out and drain the fat.
- Return the skillet back to heat, pour in the salsa and scrape up any brown bits from the bottom of the pan. Then add the beans, corn, and cilantro. Add chops, and bring to a boil. Reduce heat and simmer covered for about 6 to 8 minutes, or until chops are cooked through.
- To serve, top the pork chops with about a cup of black bean salsa and a dollop of sour cream.
Makes four servings.
I’m telling you, you have to try this recipe! I’m sure it will become a go-to dish when you’re in a hurry and family favorite in no time.
Well, I am off to conquer my to-do list. It involves the post office – am I the only one that dreads the post office? It may have something to do with the 2 and 4 year old I will have with me, but still, it has never been a favorite of mine. Maybe I will cross that task off my list first, and then the rest of the day will seem like a breeze :)
