Sausage Potato Soup

I know last week I shared a potato dish with you and I said I hardly ate mashed potatoes and now here I go with a potato soup. I can’t help it, it got cool here FINALLY and it’s got me in the mood for comfort foods :) . I cut this recipe out of Southern Living Magazine about 12 years ago and it is a huge hit with my family and friends. It’s so simple to make with just a few ingredients and it has lots of great flavor. Garnish with cheddar cheese and some crusty hard bread then call it dinner.

Ingredients:
1/2 lb. Jimmy Dean breakfast sausage
1 onion chopped
1 14.5 oz. can chicken broth
4 cups of frozen shredded hash-brown potatoes
2 cups water
1 can cream of celery soup
1 can of cream of chicken soup
2 cups of milk
Garnish: with cheese

Directions:
Step 1: In a large stock pot cook the pork sausage until it is no longer pink.
Step 2: Add onions, chicken broth, water and frozen hash-browns to the pot. Cook on medium heat until it boils then put lid on and simmer for 20 minutes.
Step 3: After the potatoes are cooked then add the canned soups stir well and then slowly pour milk in and stir well. Simmer until bubbly.
Serves: 6-8

I have a recipe similar to this except I use smoked sausage and peeled/diced Idaho potatoes.
