Southwest Chicken Salad Lettuce Wraps

If it’s hot out and your looking for a fast and refreshing dinner, then this might be your ticket.  It is so good!  The creamy avocado lime dressing has just the right amount of tang to give your taste buds a kick.  Plus they are good for you, so if you end up eating a whole batch you don’t have to feel too bad :).

I have made it four times now, having had my husband request it twice, once for dinner guests who loved it, and the ultimate test…my 18 month old even eats it!  It’s a keeper!

Southwest Chicken Salad Lettuce Wraps With an Avocado Lime Dressing

Ingredients:

head of iceberg lettuce, with the full leafs pulled off, or tortillas
meat from 1 rotisserie chicken, or four chicken breasts, cubed and chilled
1 red bell pepper, finely chopped
a bunch of cilantro, chopped
6 green onions, or 1 white onion, finely chopped
1 can black beans, rinsed
1 teaspoon of cumin
salt and pepper
optional: 1-3 jalapenos finally chopped (if you like heat)

Combine all ingredients in a large bowl, except for the lettuce.

Avocado Lime Dressing


Ingredients:

1 cup green chili sauce (I used canned)
2 avocados
4 ounces of fresh lime juice, or the juice of 4 limes
1/2 cup of sour cream

Blend in a blender until smooth.

Pour the dressing over the chicken mixture.  You may not need the whole amount, just add until it is the consistency you like.

Then scoop up into a lettuce cup and enjoy!  I think this would also be so good with some of that green Tabasco sauce, I just haven’t tried it yet.

Destri, These sound and look so delicious. You are really speaking my language here. I just love lettuce wraps, and that sauce….HELLO!!!!!

Just made these for a party (that no one came to, but that’s beside the point) and they are soooo gooood. I am actually happy I have leftovers of this one so I can eat them for a snack. or lunch. Or dinner. They are so yummy and they scream summer!I have no idea if I got the right kind of chile sauce. All I could find was salsa verde (I’m not in the US so the variety is lacking). It gives it a real good kick though and the avocado and sour cream balance it nicely.

That’s too funny, I too just had a party that the guest couldn’t make it to…and I made these again the other night with Salsa Verde but this time I made it in a salad form, so good! I just added a bit more lime juice to the dressing and then grilled the chicken with some cumin, garlic and salt on it.
Thanks so much for letting me know, I think I might even add the salsa verde to the recipe, like you said – it gives it a great kick :)
