
Strawberries are in season and it’s time to get that ice-cream maker out again because I’ve got a great frozen yogurt recipe for you that is healthy and delicious. We love strawberries at our house so I’m constantly thinking of ways to use strawberries as we almost always have them in the refrigerator or freezer. The idea for this yogurt came from the Food Network show “The Neely’s”. I made my own strawberry yogurt but adding kiwi and lime gave it a pop of flavor and tang.

The result is a light tasting fruity frozen yogurt that is perfect after a heavy meal. If you do decide to make this recipe make sure you taste the puree to adjust for sweetness. I like things sour but when I first tasted the puree it was really sour, so in came the addition of honey to my recipe. Honey gave it additional depth of flavor. If I would have had fresh mint or basil I would have put that into the fruit as it was macerating to give it a fresher clean taste and another layer of flavor. Enjoy strawberry season and this yummy frozen yogurt.
Strawberry, Kiwi, And Lime Frozen Yogurt
Ingredients:
3 1/2 cups chopped strawberries
3 kiwi’s peeled and chopped
1 lime zested and juiced
3/4 cup granulated sugar
1/4 cup honey
1 cup of Greek style plain yogurt
Directions:
Step 1: Wash all fruit. Hull and chopped strawberries. Peel kiwi and chop. Zest lime and juice it. Put all these ingredients into a medium bowl with the sugar and honey then stir. Put into the refrigerator for about an hour.
Step 2: After an hour put fruit into a blender with 1 cup of yogurt and blend until smooth.
Step 3: Strain out the seeds through a wire sieve
Step 4: Process sherbet in an electric ice-cream maker until its begins to harden. When the sherbet is done take out of the ice-cream maker and put into a freezer safe container with lid and freeze over night.
Serve: with fresh fruit like strawberries, bananas, kiwi or cantelope.
Makes 1 quart.
