Tasty Sloppy Joes

Sometimes I forget about sloppy joes, and I was thinking maybe you forget about them sometimes too.  So consider this your reminder that sloppy joes are a fun dinner idea.

If your husband is anything like mine he really likes sloppy joes and would be really happy if you made them every week. Well, I average about once every three years….not to bad right. :)

So last week I was asking him for some ideas for dinners and he, a little too quickly, replied, “Sloppy joes.”

ME: “Oh yeah, sloppy joes, I forgot about those.”

I think the reason I kind of forget about them sometimes is because I didn’t really like my moms sloppy joes growing up.  I can’t believe I just wrote that. My mom occasionally reads this blog….In my defense they had vinegar in them and really did taste weird. Love you Mom!

The recipe I am going to share today, is one I got from my friend Whitney. It’s really yummy. In fact it’s kind of the reason I decided I might actually like sloppy joes. The ironic thing about this recipe is that it calls for a bay leaf. I really hate bay leafs in most recipes, but I have to say these sloppy joes would not be the same without it.

Whitney’s Sloppy Joes

2 lbs ground beef
2 medium onions, finely chopped
1 tbsp flour
2 cups ketchup
1-1/2 cups V8 vegetable juice
2 tbsp Worcestershire sauce
1 tbsp brown sugar
1 tbsp mustard
1 tsp curry powder
1 tsp salt
1/8 tsp ground pepper
1 bay leaf
Brown ground beef with onions. Drain fat if desired. Add flour and other spices. Mix well and then add all other ingredients. Bring to a simmer and allow to simmer on low heat for at least 30-60 minutes. The longer you can let it be the better. Take the bay leaf out before serving. This recipe would also be great to do in the crock pot.

We served it up with some potato chips and a yummy broccoli salad. My husband was sure happy with dinner. During the whole meal he kept saying, “This is so good,”…..”This is such a good dinner Maria.”…”These are so good.”…………

Me: “Okay, I get it, you REALLY like dinner, I’ll make it again sometime.”

So basically I just thought this was the best thing to share with you this week, just in case your husband is anything like mine.

That is too funny, it is seriously the other way around in my house! I LOVE sloppy joes. Not the manwhich kind but the home made, so I can’t wait to try this recipe!

It makes anywhere from 12-16 or so sloppy joes, depending on how big your buns are and how full you feel them. It may even make more like 20 if you try to stretch it a little more. We like lots of the meat mixture on our sloppy joes so for our family it makes about 12 or 13.
