
If you are lucky, your tomatoes are just now coming on, or at the very least your neighbor’s are, or they are overflowing at your local farmers market. Anyway you get ‘em…you have to try this. So so good. My husband and I stopped by a cafe last week and ordered what they called a tomato and avocado bagel for a snack, and neither of us can quit thinking of it. It’s one thing for me to love something, I always get excited about food, but when my hubbs gets excited, you know it’s a keeper.
Start with a slightly toasted bagel – I used mini wheat bagels. Smear on as much cream cheese as you are comfortable with, then layer on a healthy dose of smashed avocado, followed by a leaf or two of fresh basil. Then top it with a tomato (sliced) that has not stepped foot into a refrigerator…seriously not even for a second, that is like death for a tomato. Sprinkle on some kosher or sea salt and some freshly cracked pepper….and that my friends is love on a bagel.
I could eat it for breakfast, lunch, dinner, midnight snack……
What do you do with your garden tomatoes? I would love to hear your ideas. I had stuffed and roasted tomatoes once that were to die for, anyone have a good recipe for that?

Love bagel sandwiches and this sounds like the best lunch I can think of right now. Glad you shared it!
It is the best lunch, you don’t feel weighed down at all. My hubbs seems to think a little turkey would be good, but why fight the tomato ya know?! Thanks Michelle!
We’ve been making margherita pizzas: fresh basil, fresh tomatoes, fresh mozarella, all on a pizza crust brushed with olive oil. YUM!
