Vegetarian Taco Stew on Rice

I have mentioned before that my family tries to have at least two or three nights a week that are meatless or contain very little meat. This healthy and filling Vegetarian Taco Stew over Rice was sort of an accident, but my kids loved it so much that it has become a regular on our revolving simple recipes dock. Perfect for these busy December nights when we have three different directions to run in, and can’t stomach the thought of one more drive thru dinner.

My kids love rice and they really love anything I let them eat with tortilla chips, aka taco soup or chili. So this Vegetarian Taco Stew over Rice was bound to be a hit. I love it because it comes together in minutes with simple ingredients I can pull out of my pantry. Catch me after the jump for the recipe.

Vegetarian Taco Stew Over Rice

Serves 4-6

Ingredients:

1-2 Tbsp canola or vegetable oil
1 cup diced onion*
2 cloves garlic, crushed or finely diced
4 Tbsp diced green chillies (or one, very finely, chopped and seeded jalapeno)
1-1/2 tsp chili powder
1 tsp cumin
1/8 tsp oregano
1/2 tsp paprika, I like smoked paprika
1 cube vegetable bullion, (If you aren’t strictly vegetarian you can use chicken or beef bullion)
2 15 oz cans red kidney beans, drained and rinsed
1 15 oz can tomato sauce
1 15 oz can diced or crushed tomatoes, your preference. (I like crushed ‘cuz I have a boy who picks out the big chunks of tomato if he sees them.)
1 15 oz can corn, or 1-1/2 cups frozen corn
Salt and Pepper to taste
4-6 cups cooked white rice
Grated cheese
Tortilla chips

*Can also use dehydrated onions in this recipe, just make sure you rehydrate them first so you can saute them with the garlic and pepper.

Directions:

  • Heat oil in 2 quart pan. Add onion, garlic and pepper. Lightly salt and pepper the onion mixture. Saute until onionis or translucent.
  • Add spices and bullion and continue to saute for 1 minute.
  • Add tomato sauce, tomatoes, beans and corn. Bring to a simmer and simmer for 5-10 minutes.
  • Serve over rice with cheese and tortilla chips. Can also be served with Sour Cream.
