White Chicken Chili

It’s my turn to share my favorite recipe for soup week.  White Chicken Chili has by far got to be my favorite chili!  If you love Mexican food then you have to try this.  It is so good, and so easy.  Perfect for a cold night to warm you up :)

2 c. small white beans (soak overnight in 5 c. of water in a stockpot)

2 onions chopped

48 oz. chicken broth (may need more depending on how thick you like it)

4 c. cooked chicken

3-6 cloves of garlic

3 T. fresh oregano 1 ½ tsp flakes

2-4 tsp cumin

1 ½ tsp of cayenne pepper (to taste)

7 oz. chopped green chilies

1 c. sour cream

3 c. Monterrey Jack Cheese

After the beans are done soaking, drain and rinse.  Simmer beans in chicken broth with the onions  for 1 ½ hours.  Then add the rest of the ingredients and simmer until beans are soft.  Just before serving add the sour cream and Monterrey Jack Cheese.  Serve with tortilla chips.

Yummy- I want to make this tonight. I think I have everything too. Yeah! Thanks Aubrey. Oh, I guess I haven’t got beans that soaked over night but I’ll figure something out. :)
